Restaurant De Jonkman, Bruges, Design: VerilinThe two-Michelin-starred De Jonkman is located on the outskirts of Bruges. Here, head chef Filip Claeys and Sandra Meirlevede present a cuisine that is rigorously devoted to the idea of terroir and to refining sustainably sourced ingredients. In 2011, Filip founded the NorthSeaChef collective with the aim of giving new appreciation to so-called “bycatch,” previously largely neglected by haute cuisine—and in doing so, also contributing to the protection of marine species.
Identity is the signature dish. Origin, quality, and creativity are the key ingredients, and they are reflected in the interior concept as well. The story of the former hunting lodge is spelled out in the natural solidity of the stone floor as much as in the warm crackling of the fireplace. At the same time, everything feels light and transparent. The complete textile concept—designed by Atelier Verilin and produced in Belgium—weaves together craftsmanship, tactility, and premium quality, while also creating a pleasantly subdued acoustic atmosphere. Translucent curtain fabrics allow for a visual dialogue between inside and outside.
Shelving and room dividers made of fine walnut wood serve as striking design elements. The LUZ armchairs and LUZ chairs continue this material language and were crafted especially for De Jonkman in the same wood. With their restrained, classically modern form, they blend perfectly into the harmoniously balanced interior. The chair’s ergonomics and its upholstery covered in naturally tanned leather invite guests to linger. Everything here has its purpose—especially seating comfort. All the more so when four wonderfully indulgent hours pass by all too quickly between amuse-bouche and digestif.
