Sancal comes back to Madrid as part of a very chic restaurant. Mix of flavors and concepts: handmade cheeses from everywhere in a remarkable contemporary environment.

A perfect marriage between tradition and vanguard for a place with its own identity. The restaurant reproduces and illustrates the particular philosophy that Poncelet applies in the manufacturing process of its cheeses.

The Cheese Bar is more than a simple place to eat; it is a cool setting for special meetings where tedium is forbidden. Near the bar there are some lounge areas, and there is also a library. One can appreciate the fine work made by Gabriel Corchero and the sensibility for details of his studio.
