Digestion problems

It's certainly got a good deal hotter in the kitchen for the gastro sector over the past six months. An industry that operates on notoriously small margins and tight cash flows is an obvious, and obviously tragic, casualty when it comes to a business-paralysing black-swan event like Covid-19. Social-distancing measures are one thing, but, without sufficient covers, you ain't cooking with gas.
 
If ever there were a time for restaurants to embrace value-adding, competitive-edge-lending and, indeed, safety-increasing design, it's now. And for us, as diners, to support them where we can.

Throughout history, various methods of construction have been developed to mediate between architecture and the extremely complex topography of Japan. One of these methods, kakezukuri, which uses supports to float the building out over a steep slope, was implemented in the Mikuni Izukogen Restaurant project.
